Thin Mints ~ Paleo Style

I love to eat and one of the things I love the most are sweets, especially when it is that time each month (and most ladies know exactly what I mean)!

We have been trying really hard to reduce certain things in our lives. We are not gluten free yet but we are very close to being fully gluten free. So when I was looking for something wonderful to eat and I found Paleo Thin Mints I was pretty excited to try them out!

Then this month when I received my Essential Rewards order there was another one, slightly different from Lexi’s Clean Kitchen. So I decided maybe I should put this recipe up for everyone to see!

THIN MINTS ~ PALEO STYLE

Ingredients
1 Cup + 1 Tablespoon Blanched Almond Flour
1 Tablespoon Tapioca
1/3 Cup Cocoa Powder
1/2 Cup + 1 Tablespoon Butter or Vegan Butter Spread (Lexi suggests grass-fed)
1-2 Teaspoons Vanilla Extract (Lexi says 1)
2 Drops Young Living Peppermint Essential Oil (Lexi says 1-2)
1/8 Teaspoon of Pink Himalayan Sea Salt (Lexi says a dash)
2 Tablespoons of Raw Honey (Lexi also suggests Pure Maple Syrup)
CHOCOLATE COATING
1/2 Cup Dark Chocolate
2 Drops Young Living Peppermint Essential Oil (Lexi says 1-2)

Instructions
Preheat oven to 350 degrees
Combine dry ingredients
Add wet ingredients
Roll into a ball and wrap in parchment paper
Chill in fridge for 45 minutes
Prep a new piece of parchment paper by sprinkling with tapioca
Take out dough ball and place on new parchment paper
Top with second piece of parchment and roll out to about 1/4 inch thickness
Use cookie cutters to get desired shape and size
Place on a lined baking sheet (to keep shape use spatula to transfer)
Bake for about 10-15 minutes or until crispy
Remove and let them cool completely.
After cookies are completely cooled melt chocolate and mix in Young Living Peppermint Essential Oil
Dip each cookie, place on parchment and let them set in fridge
